Gluten Free Cinnabon Copycat Cinnamon Roll Recipe

This is the perfect Cinnabon copycat recipe, even if you’re not gluten free. Yeah. That’s how good they are.
You can now serve these to your friends who are not gluten free and they will never know they are GF. The texture and flavor is spot-on for “normal” cinnamon buns.

Rolling out gluten free dough is tricky and cinnamon rolls, even gluten ones, can be tricky as well. Which leads us to a double whammy for GF cinnamon rolls. I’ve put together a video tutorial showing how to roll out the dough. I encourage everyone to watch it before making the rolls!

Ingredients
DOUGH:

  • ⅔ cup milk
  • 1 tablespoon butter
  • 1 packet (7 g) yeast
  • ¼ cup granulated sugar
  • ½ cup (83 g) potato starch
  • ½ cup (80 g) brown rice flour
  • ¼ cup (29 g) finely ground almond flour
  • ¼ cup (34 g) tapioca starch plus more for flouring your surface
  • ½ teaspoon baking soda
  • 1½ teaspoon xanthan gum
  • 2½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • ¼ cup olive oil
  • ½ teaspoon vanilla
  • good quality plastic wrap for rolling out (and up!) the dough

FILLING:

  • ⅓ cup butter, softened
  • ½ cup brown sugar
  • 2 tablespoons cinnamon

FROSTING:

  • 3 tablespoons butter, softened
  • 2 tablespoons cream cheese, softened
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla
  • dash of salt

Instructions

  1. Preheat oven to 350 degrees. Grease and lightly flour a pie plate.

DOUGH:

  1. Combine yeast and sugar in large mixing bowl.
  2. Microwave milk and 1 tablespoon butter to approximately 110-115 degrees. Whisk into yeast mixture and set aside to proof.
  3. Meanwhile in small bowl whisk together potato starch, brown rice flour, tapioca starch, almond flour, baking soda, xanthan gum, baking powder, and ½ teaspoon salt.
  4. Once yeast is proofed add in egg, oil, and ½ teaspoon vanilla. Mix for a moment and then slowly add in the flour mixture. Turn the mixer up to medium-high and beat for 1½ minutes – beating long enough is essential, GF flours are “thirsty,” the dough will thicken & lose it’s stickiness as you beat it.
  5. Roll out the dough: (please watch the video!) this is a sticky dough that you’ll want to roll out to approximately a 13″ x 10″ rectangle. What I have found works best is covering my work surface with a good quality plastic wrap and then a light layer of tapioca starch. I place my dough in the center and cover with a bit more tapioca starch and another sheet (or two) of plastic wrap. Roll out to the needed size and then carefully peel off the top layer of plastic wrap.
  6. Using a knife or spatula gently spread the ⅓ cup softened butter over the dough evenly leaving ½” space around the edges.

Cinnamon Sugar Pumpkin Muffins

These moist, vegan, and dairy-free cinnamon sugar pumpkin muffins are 100% whole wheat (but can also be made with all-purpose flour) and naturally sweetened with maple syrup!

The past 5 days have been a baking frenzy getting ready for the next 10 days. After eating pretty much only sweets all day long for 6 months, I need a little detox. So Mr. Texanerin, a friend and I aren’t going to eat any grains, sweeteners, potatoes or other starchy-like stuff for the next 10 days. What does that even leave? Fruits, vegetables and meat? And cheese. I’m going to eat lots of cheese. 😀

First up we have these cinnamon sugar pumpkin muffins. When they came out of the oven, they looked kind of funky texturally but they were perfectly moist, not fluffy but a little dense (but in a good way!), which is exactly how I like my cakey goodies. If you want something a little lighter, try these non-vegan baked pumpkin donuts. And if you want something gluten-free, try these paleo cinnamon sugar pumpkin donut holes.

I coated some of these in pumpkin spice sugar coating but by the end of the day, I thought they tasted like zucchini. Really! Definitely go with cinnamon sugar unless you want zucchini cinnamon sugar pumpkin muffins, which is just weird. While I liked them without the cinnamon sugar coating, I thought that they were loads better with it, which I guess is kind of obvious because, well, it’s butter, sugar, and cinnamon.

ou know how you normally just plop the batter in the pan and if it’s not very even, neat or pretty, it straightens itself out while baking? That doesn’t happen here. How they look in the pan is pretty much how they look after baking. I smoothed the top of the one of the left. If you don’t do that, they’ll look like the ones of the right.

Ingredients

For the donut holes:

  • 3/4 cup + 2 tablespoons (109 grams) whole wheat flour, whole spelt flour or all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1/4 cup (56 grams) coconut oil, melted or canola or olive oil
  • 1/2 cup (120ml) maple syrup
  • 3/4 cup (182 grams) pumpkin puree, room temperature

For the cinnamon sugar coating:

  • 1/4 cup (50 grams) granulated sugar (make sure to use vegan certified sugar for a vegan version)
  • 1 teaspoon ground cinnamon
  • 2-3 tablespoons (28-42 grams) unsalted butter (vegan butter or coconut oil for a dairy-free or vegan version), melted

Directions

  1. Preheat the oven to 350°F (175°C) and line muffin pan with 6 muffin liners.
  2. In a medium bow, mix together the dry ingredients (flour through cloves). Set aside.
  3. In a large mixing bowl, stir together the oil, maple syrup and pumpkin.
  4. Add the dry mixture to the wet one and stir just until combined.

Nutella Stuffed Churros

I haven’t been in the kitchen much this past week because Jared finally came home from tour and we have been working tirelessly on our new house. It was tough moving by myself while he was on tour, but just as tough to hold off on decorating and turning the house into a home for so many weeks. Now we can finally make it feel like a home together and we’ve gotten so much done already. We purchased some new furniture that I am SO excited to have delivered but of course, we have no idea when it’ll show up. Why can’t everything run like Amazon Prime?! Obviously getting settled and getting everything to our liking is going to take time, especially since I love home design and love creating beautiful spaces, but it’s been a blast.

I took a break from house stuff to create these Nutella Stuffed Churros because why not? Why not combine two outrageously tasty sweet treats into one decadent dessert that everyone will go gaga for?! I even filmed a step-by-step video to go along because this does require making a homemade dough, piping, deep frying, and stuffing. It’s totally doable, but so much easier when you’re following a visual guide! I hope you love these as much as we did.

Ingredients

For the cinnamon sugar:

  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

For the churros:

  • 1 tablespoon granulated sugar
  • 1 stick (4 ounces) unsalted butter
  • 1 cup water
  • 1/4 teaspoon salt
  • 1 cup (4.5 ounces) flour
  • 3 large eggs, beaten
  • Vegetable oil, for frying
  • 1/2 cup Nutella, melted until pourable

Directions

For the cinnamon sugar:

  1. Mix the sugar and cinnamon together in a large shallow bowl.

For the churros:

  1. In a medium saucepan, combine the sugar, butter, water, and salt over medium high heat and bring to a boil.
  2. Reduce the heat to low and stir in the flour. Stir well for 30-45 seconds over low heat, allowing the dough to dry out a little. Remove from heat. Stir eggs in one at a time, making sure to thoroughly incorporate each egg into the dough before adding the next one. Stir vigorously until dough is smooth.
  3. Remove the dough to a pastry bag fitted with a large open star tip (I used Ateco #827). Pipe the churros out onto a parchment-linked baking sheet, piping about 4-inches long. Use scissors to cut the end for a perfect shape. Place in the fridge while you heat the oil.

HIGH PROTEIN, LOW CARB, HEALTHY “BROWNIE” DESSERT

Who doesn’t loooooooove Chocolate! This is so cool! You can have these High Protein, Low Carb, Healthy “Brownie” Dessert Bars  when you’re on your 4-hour body Diet. Yes, that is right! Do treat these the same way you would treat hummus or nuts though. Don’t go crazy with these. I suggest making them on your cheat day and then you could have one here or there throughout the following week, if you absolutely need to have something sweet.

There is no need to forgo your pencil skirt for those sweatpants when you eat these healthy little bundles of joy because these are made with fiber rich black beans, un hun, that’s what I said…Black Beans! I know it sounds kinda gross, but they are not. These are delicious, rich and chocolaty.

Using stevia instead of sugar makes these low carb so you get that natural sweetness. I have to say that I am 100% real when I say that these are the BEST LOW CARB BROWNIES I’ve ever made. If you are in need of a quick fix…MAKE.THESE. If you seriously don’t have the time, this is your answer.

Let’s say you have an event that you need to bring something…like a pot luck thingy, or even your cheat day on the sofa, bring these. No one will ever know that these are a High Protein, Low Carb, Healthy Brownie. They’ll think that they’re the real thing and then you can surprise them in the end. Just say “Surprise!” These are actually healthy and I just saved your ass! Literally!

INGREDIENTS :

  • 1 (15.5 ounce) can black beans, rinsed and drained
  • 1/4 cup carob or cocoa powder (unsweetened)
  • 1 1/4 cups dark chocolate chips
  • 2 eggs
  • 1/3 cup coconut oil or melted butter
  • 2 tsp pure vanilla extract
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp instant coffee
  • 1-2 tbp stevia

INSTRUCTIONS :

  1. Preheat oven to 350 degrees
  2. Either line an 8 by 8 baking dish with parchment paper and leave a little out on 2 sides to make it easy to lift out after they’re baked, or Grease baking dish with butter or use non-stick dish.
  3. Mix all ingredients in a food processor until batter consistency.
  4. Pour batter into baking dish and level it out.
  5. Bake 30-35 minutes or until a toothpick comes out clean.

Ingredients

Dough

  • 1 cup warm milk
  • 1 tablespoon instant dry yeast
  • 2 tablespoons white granulated sugar
  • 1 teaspoon salt
  • 3 tablespoons salted butter, softened
  • 1 large egg
  • 3 cups all-purpose flour

Filling

  • ½ cup salted butter, melted
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon

Glaze

  • 4 ounces cream cheese, softened
  • ¼ cup salted butter, softened
  • 1 to 1½ cups powdered sugar
  • ½ teaspoon vanilla extract
  • 1 to 2 tablespoons milk

Instructions

  1. In the bowl of a stand mixer, combine warm milk, yeast, sugar, salt, butter, and eggs. Add in flour. Using a dough hook, turn the mixer on to a low speed.
  2. Once the flour starts to incorporate into the dough, increase the speed to a medium range. Add more flour as necessary so that the dough pulls away from the sides of the bowl. The dough mixture should be tacky, but not stick to your hands. It should be soft. Add more or less flour until the dough reaches the desired consistency. The amount of flour you add in bread making is always an approximation and you should go by feel.

Cake:

  • 2½ cup Flour
  • 1 cup Sugar
  • ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • ¾ cup softened Butter (cut in 1 tbsp pieces)
  • 3 Eggs
  • 1 tsp Vanilla
  • ⅔ cup Buttermilk (or ⅔ cup Milk + 1 tsp White Vinegar)

Filling:

  • 1¼ cup Brown Sugar
  • 1 tbsp Cinnamon

Crumb Topping:

  • 1 cup cold Butter (cut in 1 tbsp pieces)
  • 2¼ cup Flour
  • 1½ tbsp Cinnamon
  • 1¾ cup Brown Sugar
  • 2 tsp Vanilla
  • ¼ cup Powdered Sugar

Instructions:

  1. Preheat oven to 350.
  2. Grease 9×13″ baking dish or spray with nonstick spray.
  3. Whisk together flour, sugar, baking soda, baking powder and salt in mixer bowl.
  4. Gradually add in butter while mixing. Mixture will be crumbly.
  5. Add in eggs, vanilla and buttermilk while beating until the mixture is combined (scrape down the bowl periodically).
  6. Set batter aside.
  7. Mix together filling ingredients.
  8. Pour ½ the batter into the prepared pan and spread to level.
  9. Sprinkle filling on top of the batter.
  10. Pour remaining batter on top.
  11. Use a butter knife to swirl Through batter.

HEALTHY PEANUT BUTTER GRANOLA

Hello and Happy New Year to YOU! I’m crazy excited about all that 2017 has in store…most notably meeting this precious baby girl in April! While I’ve been super grateful for maternity jeans during the holidays {hello stretchy waist, I love you}, I’m vey ready to take a chill pill on the sugar and get our family back in the swing of healthy eating!
I thoroughly enjoyed the indulgences of the holidays with zero regrets! However, we do generally eat very healthy around here, and I love that I get to share what works for my family with all of you lovely ladies and gents! So let’s kick off 2017 with a tried and true family favorite recipe…this Healthy Peanut Butter Granola! It’s gluten-free, dairy-free, oil-free, refined-sugar free AND vegan!
Perfect for any and all eaters in your life! Beloved by everyone who lives in my humble abode, it’s a great make-ahead breakfast for those of us who like to make the mornings as easy as possibly {i.e. sleep as long as we can}! Yes it’s true. I am not a “hot breakfast every day” mom. We eat lots of muffins, smoothies, breakfast bars, baked oatmeal, and yogurt with granola…..all of which have been made ahead of time and stored in the refrigerator or freezer. Oh and I can’t forget…we even eat….cereal {gasp}… 😉
I like to make breakfast as easy and desirable as possible for my kids. They almost always get to pick whatever they want in the mornings, because the last thing I’m looking for is a battle royale over finishing their first meal of the day. {Truth}. This is why I think it’s important to have a bunch of nutritious options, like this Healthy Peanut Butter Granola, on hand and ready to be chosen by hungry little tummies.
It is ridiculously easy to make. Just melt together the honey and peanut butter, add the other wet ingredients, mix in the dry ingredients, combine and bake! In order to be extra sure your granola is done baking, remove a piece or two from the pan and let it cool on the countertop. If it hardens relatively quickly {in 1-2 minutes} then it’s done. If not, continue baking until it is crunchy at room temperature.
No worries if you do under bake this healthy peanut butter granola and it becomes soft the next day, just pop it back into the oven for a few minutes to re-crisp it! Just be SUPER careful not to forget you put it back in the oven…I may have done this on more than one occasion. Whoopsies.

INGREDIENTS :

  • 2 cups old-fashioned (or quick cooking) oats*
  • ½ tsp ground cinnamon
  • ¼ tsp sea salt
  • ¼ cup natural peanut butter
  • ¼ cup honey (or maple syrup for vegan)
  • ½ tsp pure vanilla extract

INSTRUCTIONS :

  1. Preheat oven to 325 degrees F. Grease a large cookie sheet and set aside.
  2. In a small bowl, mix together oats, salt and cinnamon. Set aside
  3. In a microwave safe dish or on the stovetop,
  4. melt the peanut butter and honey (or maple syrup) together until smooth.
  5. Remove from heat and stir in vanilla.
  6. Stir in dry ingredients and mix until well combined.
  7. Spread mixture on prepared cookie sheet.
  8. Bake in the preheated oven for 20-25 minutes, or until granola is lightly browned, stirring the granola once gently half way through. (A great way to test for doneness is to remove a small portion of the granola from the pan and set it on the counter.
  9. If it hardens as it cools the rest of the granola is done)!

Apple Fries with Caramel Cream Dip

These Apple Fries with Caramel Cream Dip from Favorite Family Recipes are a must make this fall! The apples slices get lightly battered, fried and sprinkled with your favorites — cinnamon and sugar! Then add in the creamy caramel infused dip and you have one heck of a sweet treat that your family is really going to LOVE!
These Apple Fries with Caramel Cream Dip are the perfect warm dessert for a crisp Autumn evening. It made our house smell like apple pie. My husband and I dreamed these up while driving home from a family hike and couldn’t wait to get home to try them out. We both love apples but have a weird allergy where we can’t eat them raw, it makes or throats itchy and tight I know, it’s super weird and started when we were living in California, we can’t figure it out.
As long as they are cooked, we are fine. But we have missed being able to eat raw apples dipped in caramel, so we came up with this delicious creation. The apples slices are lightly battered and fried in a shallow pan, then sprinkled with cinnamon and sugar. The caramel dip is creamy and caramel infused, and oh so yummy.

INGREDIENTS :
For the Apples:

  • 4 to 5 tart apples, we used Pink Ladies
  • 1 cup buttermilk
  • 1 cup sugar
  • wondra flour
  • vegetable oil for frying
  • cinnamon and sugar, to taste

For the Dip:

  • 1 (8 oz) cream cheese
  • 1 small container cool whip (or 1 cup whipping cream with 1/2 cup sugar- whipped until stiff)
  • 1 cup caramel sauce

INSTRUCTIONS :

  1. In a fry pan, or deep fryer heat vegetable oil for frying.
  2. Mix together the buttermilk and sugar in a medium size bowl.
  3. Peel and slice apples and add them to the buttermilk mixture as you go to prevent browning.
  4. In a shallow dish, put a layer of wonder flour.
  5. Pull the apples out of the buttermilk mix, one at a time and lightly coat all sides in the flour.
  6. When oil is nice and hot, gently place coated apples into the oil so they are not touching, when the bottom side begins to turn golden, flip over and brown the second side.
  7. Quickly remove to a tray lined with paper towels to soak up excess grease and cool.
  8. Sprinkle immediately with cinnamon and sugar while they are hot.

For the dip:

  1. Mix together the the cream cheese and cool whip until completely blended then stir in the caramel sauce.
  2. Place into a bowl for dipping and drizzle a little extra caramel sauce over the top.

CINNAMON ROLL DESSERT PIZZA

Inspired by Papa Murphy’s Cinnamon Wheel, this dessert pizza has all of the goodness of a cinnamon roll!   A buttery brown sugar cinnamon spread on top of a quick and easy pizza dough, and drizzled with a cream cheese glaze!
We love pizza night at our house. And they have been getting more frequent these days because we are so busy! My boys always beg me to make homemade pizza instead of ordering out. But when we do get a pizza, we love the take and bake pizzas. Our family loves the cinnamon wheel from Papa Murphy’s. And the last time we got it I thought to myself, I can totally make this! And I can make it even better. And before I knew it, the best cinnamon roll dessert pizza was born.
It all starts with my quick and easy pizza dough. This is my favorite dough recipe in the entire world. I use it for several recipes on the blog. I love it because it only requires 20 minutes of rest time, so you can have your pizza in and out of the oven in no time at all! The dough is perfect. Soft and the perfect pizza consistency. It bakes perfectly every time!
Everything about this dessert pizza turned out fantastic! Even better then our favorite pizza. But I think you will agree that the best part is the cream cheese glaze on top! Two of the worlds greatest things ever combine to bring you this amazing dessert pizza that your family will love!

INGREDIENTS :
Dough Ingredients:

  • 1½ cups warm water
  • 2 Tbsp. sugar
  • 1 Tbsp. yeast
  • 3½ cups flour
  • 1 tsp Salt

Buttery Cinnamon Sugar Spread:

  • ½ cup butter, softened
  • ½ cup brown sugar
  • ½ cup old fashioned oats
  • 3 Teaspoons cinnamon

Cream Cheese Glaze:

  • 4 tablespoons unsalted butter
  • 2-ounces cream cheese, at room temperature
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla extract

INSTRUCTIONS :

  1. Preheat oven to 400 degrees. Spray a 12 inch pizza sheet lightly with cooking spray. Set aside.
  2. Mix warm water, sugar and yeast together. Let that sit for 5 minutes.
  3. Add flour and salt to the water, sugar, and yeast. Mix this until smooth and let it raise for 10 minutes.
  4. I used my kitchenaid mixer with the dough hook and it was so easy and worked great!
  5. Roll the dough into a 12 inch circle and place on top of pizza pan. If you want the dough to be thinner, divide it in half and use the other half for pizza.
  6. Once it is in the pizza pan let it rest for 10 minutes.
  7. To make the spread: In a small bowl combine butter, brown sugar, oats, and cinnamon.
  8. Spread thinly on top of the pizza crust.
  9. Sprinkle with additional brown sugar if desired.
  10. Bake for 12-15 minutes or until the edges are light brown.

GINGERBREAD CAKE WITH CINNAMON CREAM CHEESE FROSTING AND CARAMEL DRIZZLE

A fun holiday cake this Gingerbread Cake with Cinnamon Cream Cheese Frosting and Caramel Drizzle is sure to evoke all the holiday joy!
You guys, Christmas is in 3 weeks. How can this be? It feels like it was just the end of Summer and school was just starting. We were still in flip flops, shorts and t-shirts. Fall literally flew by and now we are going to be in full fledged winter mode. Snow, frigid temps, boots and parkas.
I’m from Minnesota do winters can be pretty brutal here. -30 is nothing new and snow reaching a few feet every so often is something that we are used to. But in all honesty, as much as this is the norm here….it is never easy to get used to once it starts for the season. NEVER.
But this is one of the best times of the year. With Thanksgiving, Christmas and the New Year all clustered together in the span of 6 weeks; it’s like the celebration never ends. Family gatherings and good food are just the beginning.
Speaking of good food, this Gingerbread Cake with Cinnamon Cream Cheese Frosting and Caramel Drizzle is one for the books. Nothing screams Christmastime more than gingerbread to me. I always have to sneak in 1 or 10 gingerbread recipes throughout this time of year because frankly, I’m addicted to the flavor.
This holiday fave utilizes Bob’s Red Mill Organic Unbleached All-Purpose White Flour as one of the key and essential ingredients. This flour is freshly milled from Organic hard red wheat. Both the bran and the germ have been removed leaving the endosperm that is made into white flour. It is not enriched with any additives.

INGREDIENTS :
CAKE

  • 1 cup butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 cup molasses
  • 2 eggs
  • 3 cups Bob’s Red Mill Organic All-Purpose White Flour
  • 1 1/2 tsp cinnamon
  • 1/2 tsp all-spice
  • 1 1/2 tsp ginger
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 1/4 cup mik

CREAM CHEESE FROSTING

  • 2 cups butter, softened
  • 2 (8 oz) blocks cream cheese, softened
  • 4-5 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 tsp cinnamon, add more if needed and taste to your liking

CARAMEL SAUCE

  • 1 (11 oz) bag caramel bits
  • 1/2 cup cream

INSTRUCTIONS :

  1. Preheat oven to 350.
  2. Spray 2 9″ round cake pans with non-stick cooking spray and line with parchment paper, set aside.
  3. In bowl with electric mixer mix together your butter and sugars until light and fluffy, about 2-3 minutes.
  4. Add in your molasses and eggs and keep mixing until smooth.
  5. In another bowl mix together your flour, baking powder, baking soda and spices.
  6. Alternate adding your flour mixture and milk into butter mixture in about 3 additions.
  7. Once everything is blended, distribute evenly in prepared pans and bake for about 30 minutes or until cake springs back and toothpick comes out clean.
  8. Remove from oven and let cool in pans for about 5 minutes, then run knife around edges of pans and turn cakes out onto wire racks to cool completes.
  9. While cooling make your frosting by beating your butter until fluffy.
  10. Add in your cream cheese and continue mixing until combined.
  11. Add in your powdered sugar 1 cup at a time, once all is added add in your heave cream until you reach your desired consistency
  12. Add in you cinnamon and mix.
  13. Once cakes are cool, add on layer onto cake stand/turntable and top with about 1 cup of your cinnamon cream cheese frosting.
  14. Top with other layer and spread a thin layer of frosting on the outside and top of cake to create a crumb coat then place in freezer for about 20 minutes.
  15. After 20 minutes remove from freezer and continue to frost your cake reserving about 1 cup for decorating at end, starting from top down until sides and top is smooth, place back into freezer for about 20 minutes.
